We’ve covered farm to table on “Eat Like a Local”, so now in this episode we’re talking boat to table! Host Chris Shepherd headed to the coast to learn how blue crabs make it from our local waterways to our local restaurants.
Chris met up with Captain Fred McBride, a classically trained musician who gave up teaching music to HISD students to pursue his passion – fishing.
As a commercial fisherman, Captain Fred serves as a provider of fresh, local seafood and fish to restaurants around Houston. He took Chris out to show him how he catches blue crab in the morning and gets them to restaurants before the lunch rush.

After learning how the crabs thrive in our eco-system and filling the day’s orders, Chris and Fred delivered their fresh catch to Josephine’s in midtown where chef Lucas McKinney explained how to cook blue crabs the Texas way – on the grill. It’s straightforward approach that Lucas says is great way to cook crabs at home.

Of course, Josphine’s isn’t the only restaurant Captain Fred is supplying. Chris headed to Humble to another of Captain Fred’s stops, Captain Crawfish. Here Chris tried a blue crab, crawfish and, new to Chris, baby octopus seafood boil. It’s a rich and saucy meal that had Chris reconsidering the need for a bib!
