The “jungle paradise” will be “a continued evolution of the coffee shop, dispensary, and cocktail bar with a new added element of high-end plates and tapas designed by Executive Chef German Mosquera,” a release reads.

Mosquera studied with master chefs in America and Europe while receiving his degree from the Culinary Institute of America. He has over 18 years of experience as a culinarian.

“Wild Montrose brings the new fine-dining experience that promises to take guests on a culinary journey around the world focusing on coastal foods from different regions and countries along with vegan options,” the release reads. “Diners will have the ability to enjoy the food the way it is or infuse their plates with CBD or THC for the ultimate experience.”

Cocktail, wine, and cannabis pairings will also be available.

Montrose will serve brunch and dinner daily.  Small plates on the menu include Tiradito, charcoal kissed bluefin tuna belly, el toce, aji amarillo, rainforest honey bubbles, fragrant oil, Buckwheat Tempura Cauliflower with sweet, pickled ginger chili glaze, black sesame and Thai basil.  Large shareables include Whole Crispy Thai Style Fish and Wild branded Wagyu beef tomahawk.

On the brunch menu, there’s Paine Perdue (Lost bread), which is croissant cube “French toast”, pure maple syrup, banana brulee and Chantilly cream, Crispy Plantain style “Migas” con chorizo and more

The cocktail menu will include drinks like Mango Rye Tai made with Old Forester 100 Rye, Pierre Ferrand Dry Curaco, Mr. Black, mango, orgeat, lime and angostura and the Kiss Me I’m Japanese, which features a mixture of Nikka Gin, yuzu, lemon, matcha and egg whites.

“We are thrilled to open up our newest location in Montrose and think it is the perfect location to launch our new food options,” said Co-Founder Adyson Alvis in a statement. “We want this concept to be a one-of-a-kind immersive experience that will take our customers on a culinary roller coaster.” Said Co-Founder Andrew Alvis

Both the Montrose and the Heights Wild locations have similar décor, which is described as “a jungle-like, coastal vibe filled with living greenery throughout the space.”

Wild Montrose will be open 8 a.m. to midnight daily, serving brunch until 3 p.m. and dinner 4 p.m. to 10 p.m.
