Shake your rump and your sweet tooth: Rebecca Masson talks Beastie Boys, Top Chef with Ad Rock, and Taste of the Nation

HOUSTONKPRC’s 2 Zorrie Jones caught up with Rebecca Masson, the owner of Houston’s beloved Fluff Bake Bar—ahead of her big night at Taste of the Nation on April 24. But instead of focusing on just the event, we asked her about her: where her creativity comes from, what inspires her, and why desserts should always have names.

Masson describes Fluff Bake Bar isn’t just about desserts; it’s a whole vibe. “We’re fun! It’s an open kitchen, so you see us working, and the smell of baking cookies is like my perfume now,” Becky explains.

And what’s the theme song for her bakery? “Shake Your Rump” by the Beastie Boys perfectly captures the fun and energy of Fluff Bake Bar.

The art of naming desserts

Naming her desserts is a passion for Masson. She shared a few favorites:

  • Booty Call Brownie: A chocolate brownie with chocolate chip cookie dough. “After a booty call, you say ‘call me…maybe,’ right?”
  • Call Me… Maybe: A vanilla version [of booty call brownie]
  • Unicorn Bait: A sugar cookie with rainbow sugar and sprinkles.
  • Veruca Salt Cake: Inspired by her favorite character from Willy Wonka, this cake combines chocolate, salted caramel buttercream, and a crunchy pretzel topping.

One of her most outrageous concoctions was created as an April Fool’s joke: the “El Couch.” This quirky cookie features a mix of nacho cheese Doritos, pretzels, cornflakes, marshmallows, and chocolate chips. “It was supposed to be a joke,” she laughs, “but it turned out to be surprisingly popular!”

When it comes to crowd-pleasers, Masson notes, “Our customers totally freak out over the Couch Potato Cookie. It hits all the hot buttons: salty, sweet, chewy, crunchy. It’s a happy cookie!”

When asked how she would describe herself as a dessert, Becky says, “Some days I wanna just be a chocolate chip cookie… and other days I want to be a French eclair.” This playful spirit extends to her adventurous flavor combinations and dessert creations.

Dream collaborations and surprises

If she could collaborate with anyone, it would be Ad (Adam Keefe Horovitz) Rock from the Beastie Boys.

”I was on Top Chef Just Desserts and I got sent home by Ad Rock from the Beastie Boys, which crushed my very soul because I’d had a crush on him since I was 13.”

Masson said “I would want to collaborate with him so that I could show him I don’t suck it would] satisfy my soul.”

Masson also shared something surprising that people will be surprised she bakes?

“Make a crunch out of Cheez-Its for a Cheez-It chocolate chip cookie!”

Celebrating milestones

Reflecting on her journey, Becky shares, “I’m celebrating 14 years of being in business. I’ve been lucky and blessed with a loyal customer base—some have been buying cakes from me since before I even opened!”

Masson credits her success to her dedicated staff: “I have a really good team. We’re closed two days a week, which helps us maintain balance.”

Her advice for anyone pursuing their creative passions is simple: “Don’t be lazy. Be willing to learn, pay attention, and ask questions.”

What to expect at Taste of the Nation

At the upcoming Taste of the Nation, Masson will showcase her Goo Goo Cluster dessert -inspired by her grandmother: a goo goo pie parfait featuring caramel, peanuts, marshmallow, and milk chocolate crèmeux.
