Four generations of bakers are the special ingredients that make this Filipino bakery in Houston so delicious

HOUSTON – Jon Valerio remembers when his father came up with the idea to make a smaller version of the Pan de Ube that was always so popular it flew off the shelf at the original The Baker’s Son bakery. “When I was a little kid, we used to always eat Pan de Ube. It was too big, so we’d slice it in half. My dad came up with a new way of making a bite-sized version of it,” said Valerio, who, as the fourth generation in a line of bakers, continues to serve his father’s creation.

The Baker’s Son began its journey in Jacksonville, Florida. The new Sugar Land location is their third, with another store in Houston near the medical center. At the weekend, the bakery is busting, and many of the Filipino favorites sell out before the morning is over. Support from Houston’s local Filipino community is strong but for those unfamiliar with Filipino baked goods, Valerio describes them as a delightful mix of savory and sweet. Items like their empanadas highlight the cuisine’s Spanish influence and Ube colors many favorites. The sweet purple yam is known for its earthy sweetness and vibrant hue, which naturally colors many of the treats, including the Ube croissants. All up, the Baker’s Son can have up to six different flavored croissants available, including almond and Valerio’s favorite, the Dubai chocolate croissant.
