Meet the chef behind Houston’s Michelin Star restaurant BCN

Chris Shepherd sits down with Chef Luis Roger on ‘Eat Like a Local’ today at 10 a.m.

Houston is home to a handful of Spanish restaurants, but perhaps none capture the diversity of Spain’s cuisine and culture quite like Chef Luis Roger’s restaurant duo, BCN and MAD.

In this episode of “Eat Like a Local”, experience Spanish cuisine through the mind of Chef Luis. Host Chris Shepherd caught up with Chef Luis the day after BCN nabbed a coveted Michelin Star at Texas’ first-ever Michelin ceremony. While regular diners at BCN may not be surprised by the acclaim, Luis said he stills struggles to believe it.

Coming to Houston from Barcelona with no money in his pockets, he could not foresee the success he would have here. Over ten years, he worked with owner Ignacio Torres to build a restaurant that would bring a “100% Spanish” experience to Houston. Chris thinks he’s nailed it.

From the décor to the impeccable service and for Chris, most notably, the sourcing of Spanish product, BCN transports guests from its Montrose home to the diverse regions of Spain. Spanish classics like patatas bravas, bomba rice, Spanish Ibérico ham and toasted “Pa Amb Tomaca” are a must on every visit.

MAD

After experiencing fine dining at BCN, Chris heads to its sister concept, MAD. MAD draws its name from the Madrid airport code and inside you’ll find the vibe of Madrid’s nightlife.

Intended as a place to grab shared bites and drinks with friends, there are few limits to the creativity on this menu. Wagyu crisps, the MAD tomato, and “newspaper” wrapped steak tartare sit alongside classics like wood-fired rice dishes, cochinillo Iberico and expertly prepared seafood. It’s a dynamic mix of textures and flavors that are both familiar and unexpected – just make sure you save room for dessert!
