Mèo Bar, a speakeasy hidden inside Wokker HTX in The Heights, is visiting Studio B today and shared a recipe for Pho Carpaccio...yes, read that correct. PHO. CARPACCIO.
Hoisin Vinaigrette
- 1 teaspoon minced garlic
- 1.5 tablespoon hoisin sauce
- 1 teaspoon sriracha
- 2 tablespoons extra virgin olive oil
- 0.5 teaspoon light soy sauce
- 1 tablespoon water
Carpaccio
- 0.5 oz clove
- 0.1 oz star anise
- 0.5 oz cinnamon
- 0.5 oz coriander seeds
- 2 oz kosher salt
- 1 oz black pepper
- 3 oz beef tenderloin
Salad Base
- 3 oz arugula
- 1 stem thai basil
- 2 stem cilantro
- 0.2 oz shallots
Instructions
- Toast the ingredients for the carpaccio rub in a pan on low heat until fragrant. Blend in a spice grinder for a fine consistency.
- Cover the tenderloin with the spice rub and sear on high heat. The tenderloin should be cooked to rare.
- Place the beef in the freezer for about 30 to 60 minutes. This helps to firm it up, making it easier to slice thinly.
- Remove the beef from the freezer and use a sharp knife to slice it as thinly as possible. If you have a meat slicer, that can work well, too.
- Lay the slices of beef on a serving plate, slightly overlapping them to create a beautiful presentation.
- Combine the ingredients for the dressing and generously coat the salad base
- Squeeze fresh lemon juice over the top for acidity and flavor.
- Serve immediately as an appetizer or a light main dish.
