Dinner made easy: Parchment paper fish packets with Marcia Smart

HOUSTON – Take the guesswork out of meal planning with this simple recipe from Marcia Smart.

The culinary instructor and cookbook author recently stopped by Houston Life to show us how to make parchment paper fish packets or fish “en papillote” - as the French call it.

Smart calls this a “choose your own adventure” dinner.

She starts with the fish filets - which could be snapper, flounder, cod, grouper, halibut, swordfish, salmon or Artic char - whatever your family prefers.

Then, she begins to assemble the fish packets using haricot vert, fresh herbs, olive oil, salt and pepper and lemon.

Next, set out your family’s favorite toppings and let everyone fill their own parchment paper packet.

She recommends cherry tomatoes, prepared pesto, thinly sliced red bell peppers, green onions, capers or olives.

Once you’ve assembled your parchment paper packets - bake in the oven at 400° for 15 minutes or until an instant read thermometer registers 143° to 145° when inserted through the paper into fish. Caution - packet will be very hot when you remove it from the oven.
