Start the school day with dietitian Macy Diulus’s tasty and balanced breakfast recipes

HOUSTON – Registered dietitian and owner of Whole Grain Crumbs Macy Diulus’s journey to food and nutrition began with deeply personal experiences. Watching her mother battle cancer twice showed her early on how closely food and health are connected.

Later, Macy faced her own gastrointestinal health challenges in high school, involving feeding tubes and frequent doctor visits. These experiences inspired her to become a dietitian, combining her love of food with a passion for helping others manage and prevent health conditions.

Today in the “Houston Life” kitchen, Diulus shares creative, fun, and nutritious recipes that kids will love. Her approach makes healthy eating accessible and approachable for busy families, proving that balanced meals can be both tasty and enjoyable.

Here are three of Macy’s back-to-school breakfast recipes you can make with your kids:

Banana sushi

Serves 1

  • 1 whole wheat tortilla
  • 2 tablespoons peanut butter (or sunflower seed butter)
  • 1 medium ripe banana
  • 1 teaspoon hemp seeds
  • Sprinkle of ground cinnamon
  1. Spread the peanut butter onto the tortilla. Peel the banana and place it in the middle of the tortilla.
  2. Sprinkle on the help seeds and cinnamon.
  3. Tightly wrap the tortilla around the banana. Once wrapped, place the seam side down onto the cutting board.
  4. Use a sharp knife to slice into 5-6 pieces.
  5. Use a toothpick to keep sushi pieces intact. Serve and enjoy.

Mini pancake bento box with Greek yogurt dip

Serves 1

  • 5-10 mini pancakes (Frozen or whole grain mix such as Kodiak)
  • ⅓ cup vanilla Greek yogurt
  • 1 tablespoon peanut butter (or sunflower seed butter)
  • ½ teaspoon of fun mix-in (sprinkles, mini chocolate chips, dried fruit)
  1. In a bowl, mix the vanilla Greek yogurt, peanut butter, and fun mix-ins.
  2. Once well mixed, place in a small serving container.
  3. Pair with mini pancakes and seasonal fruit. Enjoy!

PB & J smoothie

Serves 1

  • ½ cup frozen strawberries + banana
  • ⅓ cup frozen zucchini
  • ⅓ vanilla Greek yogurt
  • ½ cup milk of choice
  • 1 tablespoon peanut butter
  • Optional Garnish: 1 oz Freeze Dried Strawberries
  1. Blend ingredients until creamy in a personal-size blender.
  2. Pour into a cup.
  3. Garnish with strawberries and enjoy with a straw.
