“My favorite vegetables for pickling are beets, cauliflower, green beans, okra, tomatoes, asparagus, and of course cucumbers, You can store it for 2 months in the refrigerator,” said Chatagnier, author of Modern Cajun Cooking.

“You can add pickles to bloody Mary’s, salads, sandwiches, or just keep on hand for easy snacking,” she said.
