Houston dietitian releases new cookbook to help manage diabetes and balance blood sugars

HOUSTON – Mary Ellen Phipps, a registered dietitian and founder of Milk & Honey Nutrition, shares her own personal experience with Type 1 diabetes in a new cookbook.

Phipps was diagnosed with Type 1 diabetes when she was five years old.

“I don’t remember life without diabetes,” Phipps explained.

She grew up always having to make adjustments to foods, and as she got older, she became more interested in cooking and creating her own recipes.

And, as a registered dietitian she’s helps people living with diabetes learn how food affects their own individual bodies and successfully manage their blood sugars with delicious recipes.

“You can have tasty food and it can still be good for you,” Phipps said.

The key is to focus on what to add to your diet, not what to take away from it – and learning how to add healthy plant-based fat, fiber and protein into meals to help balance blood sugars.

The goal of her cookbook is really to make life easier for those living with diabetes by reducing stress in the kitchen, learning to enjoy food again, and gaining confidence with their meal choices.

Recipes include Grain-Free Parmesan Chicken, Mediterranean Pasta Salad With Goat Cheese and Flourless Chocolate Chip-Pecan Cookies.
